Ruby is way to firey to be Rory! If anything it could be the other way round but I'm happy doing Sadie and Lars and Amy and Rory

Maybe Steven and Connie as Amy and Rory. It makes sense. Rory is willing to go through hell for Amy and he's not technically human and Steven is similar to that. Amy is a fierce strong woman who isn't afraid to get dirty and is able to take care if herself when needed and that's definitely like Connie.
