He discovered that it was okay if he DID NOT defeat the Moon King, deciding that he wanted to both be a hero AND a family man.  Before, he was just a hero, doing great deeds for others but never thinking of his own wants and desires.

I like how you put it that way,
truly puts his adventures as a hero in a different light

Also, it makes it touching how he approved of Kubo's normal life taking care of his mother and telling stories
Because he approved that his son was the Every-Man sort of hero the world needs

Disney's Hercules got a lot of things wrong when it came to setting up their gods and monsters.  If there is one thing they did right though, it's the lesson the film teaches.  To be a true hero isn't about fighting monsters, training hard, or being famous; it's about putting the needs of others and their safety before your own.  Sariatu shows this from the start of the film by doing her damnedest to keep Kubo warm and alive through a monstrous typhoon, disregarding her own health and well-being.

Exactly!

Monkey even mentioned at some point that she couldn't swim.  Yet, when Kubo dived into the lake to save Beetle, she was about to dive in herself!
As you pointed out, she was every bit as heroic as Hanzo and Kubo.
In fact, she's a role model that mothers can be heroes so long as they live and love their children

I'm curious to know why he took on Tamatoa. Beetle doesn't have anything valuable/shiny on his person, and I can't imagine Tamatoa being away from Lalotai for any real reason. Unless he's now resorting to kleptoparasitism and is simply taking food from everyone around him? He does enjoy fish dinners, after all. (Speaking of such, I remember his actor Jemaine Clement doing precisely that. "Grand Theft Tamatoa." It can be found on YouTube.) ^^

It's there merely for anachronism-humor prop. 
Actually, they're all there as a testament of how far Beetle swam to chase his prize.  He swam to Australia (Dory) America (Captain Cutler's Ghost) Ireland (Saoirse the selkie) and the Pacific Islands (Tamatoa).  It's to exaggerate why it took him long to bring back the fish on the arrow.

Tamatoa took the fish on the arrow because he was simply going to eat it.
