I binge read the Beastars manga two weeks ago and I regret not reading it sooner but I also just didn't have a lot of time before.
Anywho, this is a drawing of Melon's mother from one of the more recent chapters at the time of this being posted, inspired by the song/music video "HOUSEWIFE RADIO" by GHOST.
Also, low-key hate the background of this, ugh.

I'm fairly certain that someone born an orphan, raised by some that you idolise, who brutally trains you in sword fighting, whores you out to a pedophile, and that triest to kill you make lack of biology somewhat irrelevant to the character.

Still, from a psychological pointview it does make sense, especially if you take his psychotic interest in Haru into question. Ones relationship to the opposite sex often depends on the nature of the relationship that a child has with their parent of the opposite sex; like a boy to his mother or a daughter to her father. Considering that Melon hated the fiction that his mother tried to uphold, he sees something very... stirring about Haru, who has a very blunt, realistic look on life. Unfortunately, being a psychopath, he doesn't really feel love or affection like a normal person. He only sees her as a very appetising source of food.

I never thought about that. You’re right, it does make sense though.
What I find disturbing is that despite hating his mother so much, he’s fully conscious that he has more in common with her than he does with his father, even down to the innocent facial expression he makes as an adult while wearing his dust mask. He’ll hide/remove benign features that he inherited from his mother such as his spots, but goes out of his way to act violently just like his mother whom he murdered.
Also, the fact that his mother didn’t make any effort to prevent Melon from maiming her is disturbing as well. She even died with a smile on her face..

The issue with Melon is that he probably wishes he was either just a carnivore or herbivore; instead being both and neither at the same time. He is a self-loathing creature. However, while his behaviour is understandable, it is not really forgivable. He doesn't even kill because he can't control his instincts; he does it because he likes it.
While I don't know whether he will be defeated by Legosi in a fight or by some other means, I personally think it would be fitting that Haru would be the one to actually get under his skin; not too unfamiliar to Clarice Starling and Hannibal Lecter. She could be like:
"Nobody should be held accountable for things that are out of their control, like being born a hybrid or a tiny herbivore. But that is the world we live in; its not fair, its not right and its a total mess. People like you are an unavoidable symptom of it all... But the thing is... The world has looked at you since you were born and has just kept telling you what you are: a monster, a hybrid and an abomination! And looking at you, I can see that's what you think you are. That is your problem: There is no freedom in acting like a monster, you're just doing what the world said you'd do! You agreed, you gave in and threw all caution to the wind. You're not here because it was your destiny, you're here because you let everyone you hated in your life WIN!"
In regards to his mother's death, I think it could be interpreted in at least two ways: both very sad and dark. For one thing, the reason she didn't fight back could've been because while she was mentally insane and may have harbored an underlying desire to eat her son (on account of his similarity to his father) she still loved him. She may have not been able to harm a hair on his head, even if it meant her own death.
Another reason could be because when she met Melon's father, it was a genuine and loving relationship. Eating him may have caused her to snap from the trauma. Her not fighting back, could be because she felt she deserved to die.

It would be cool if Haru would be able to take Melon down or bring him to justice in some kind of way. Perhaps he’d give her a chance to talk due to the kind of impression she gave him.
And I have considered both of those possibilities in terms of why Melon’s mother didn’t resist at the hour of her death. I think that it is an even mixture of both.
