I think she purposely drew her like that because Apple Jack is a pretty strong pony, and so in real life I would imagine she was a muscular horse, so to make her more realistic she made the pony's muscles more pronounced. The drawing looks really realistic because of this, because for example if you looked at a work horse on a farm or something irl, then you would see it's chest look like this :3
