In my furry headcanon, Jotaro is a bottlenose dolphin and Star Platinum is an orca.WHY A DOLPHIN?
Dolphins are very smart and excellent at hunting and work better with others. They are also highly emotional (Jotaro is too but more reserved). Jotaro is also a marine biologist and likes dolphins and I just felt having him as one would be really fitting.
WHY AN ORCA?
Orcas are huge, fast, and powerful predators. They are seen as the ocean's best predators, much like how Star Platinum is big and powerful and also seen as one of the best stands a user can have. The other reason is that the only word he can say, "ORA!", sounds similar to "orca", so I thought it would be a funny pun.
