How'd you make the pauldrons? Are they actual LEGO parts?

They are not LEGO parts. They were made by a third-party minifig accessory manufacturer called Brickforge, who sadly stopped making them since they are going out of business. The minifigs for sale on my site have some of the last ones available, probably.
