Well, I'm sure Oshus really didn't want him to go there, the temple being full of Phantom Knights and all(I'm sure he was secretly thinking, "Great, he won't go and get himself killed!")
Oshus probably knew he was the Hero of the Winds, but I think he still wasn't sure if Link would prove himself to be a true hero...maybe that's just me

I thought the serious scene was incredibly well done. I could just picture Oshus actually talking like that...now I'm thinking that Nintendo should have put that in the game (but with Ciela talking in place of Link, so he can remain "mute"). And I didn't notice any differences in Oshus's beard or skin color.
