Would beginning Necromancers practice on roadkill?OBVIOUSLY YES.
Might scrap this later, but for now, a snippet of a wallpaper I made for =xandrei and me -- it's my necromancer, Jonan, and her necromancer, Alter, as little kids... trying to animate something for the first time. XD
The inevitable zombie squirrel will be adorable, you know it will.

doesn't ressurection use so much death evergy from the necromancer that it takes them weeks to recover? well, at least, Voudoun Necromancy. Western Necromancy's different, I believe. But in Voudoun, a child wouldn't try that; it would kill them.

Yeah, with the concept of necromancy being picked up by generic fantasies everywhere, you can't really count on consistent rules anymore. 
I am pretty determined to one day witness an army of zombie squirrels. I think this would be both adorable and extremely terrifying.
