So old!Jimmy wanted to end the time loop, so there'd be only one, but now old!girl (since you never gave her a name) has seen it all - and this is before they adopted her too

No this is a flash forward after they time traveled to escape old Jimmy. At that point Jinny (the girl) was in the back of the truck as well. Older Jinny has just witnessed the escape scene where she was kidnapped as her younger self. She doesn't understand time travel yet though and is only assuming this is a strange dejavu. She is more shocked that old Jimmy was trying to kill their kids.
