This has become alot more impactful since the Season 8 episode pretty much revealed that Limestone would very much want a boyfriend given how jealous she is of Maud.

Well, given Limestone's comments on how she feels miserable all the time, I get the feeling she may feel a bit resentful of where she is in her life (while it's not confirmed, many speculate she is the oldest of the Pie sisters, hence why she is running the farm and that Pinie and Maud's bond came from being the middle girls.) We do see that Lime can be affable. I reckon that she'd probably be a tsundere though it'd depend on how the stallion was. I cannot see her being with someone like her (namely because there's a high chance it'd be unhealthy for the both of them) so seeing her being kinda of a softy with a laidback and gentle stallion would be funny, especially if she feels like she has to protect him.

She might. Anyway, my take on Limestone Pie is a bit different from what Ingrid Nilsson had in mind. *makes a note to watch the 'Hearthbreakers' episode later*
Here's a few notes on my version of this Pie Sister:
1. Limestone is the protector and guardian of the Pie Sisters and their party girl, Pinkie. She might be a little challenging to make friends with.
2. Limestone might use a 'chilli-lime' spray to protect herself, though she doesn't mind using a knife.
3. She's a bit of a potty mouth. Maudalina tries to keep her in check as best she can. Limestone might use phrases like:
A. "Oh my f**king Celestia!"
B. "Don't make me blind you with my Pie Sister Chilli-Lime spray, if you f**kin know what's good for ya."
C. "Holder's Boulder is Pie Sister Territory, unless you are friends with my sisters, in the name of Igneous Rock and Cloudy Quartz, stay away!"
D. "Don't worry girls, especially Gray-Shy (Marble), I'll protect us and the Boulder with my love, my friendship and my life."
E. "Thanks, Maudalina, for calming me down."

Also, it's actually pretty sweet that Limestone is letting Marble do this to her. My headcanon for Limestone is that she that she is very close to and tolerate of her family, especially Marlble; so I can see her actually going through with this.
