Well, if history has taught us anything, the stormtroopers will all somehow miss, the rebel will blast one of them, and the rest will subsequently fold over each other like lawn chairs.

Not quite. It's not that their aim is terrible. It's the fact that they're making it seem that way, because they got orders to bring the Protagonists in alive. Any other rebel has a 50-50 chance of getting blasted by a Trooper. Look at Rogue One and the subsequent raid on the Tantive IV.
