As someone who attended an art college where I heard numerous comments such as these to excuse an error in anatomy, I think that if the case were that she is just really flexible then that should be more obvious. They did use a reference image, however photographs can construe things because our eyes are not the same as camera lenses. When using reference, I have had to edit how I draw something because of this issue too because the anatomy just ends up looking 'off.' Trial and error is the way though. They followed the photograph very well and I think it's obvious what they were going for, but I've learned the hard way that critique is always a good thing as long as it is constructive.
