Sorry for the late reply! My favorite twi shy moment was ''''The hooffields and mccolts'' !! I was screaming like a fangirl when they both got called by the map! Also this moment was very cute > < I had to repeat that part 5 times lmao.. I love this ship so much and it's sad that they don't get the love they deserve from the community. Those are my favorite moments too!
Additionally, another of my favorite "Twi-Shy" moments is way back in S1 titled "A bird in a hoof". It's during the 2nd half of that episode where it goes full Twi-Shy every minute. 
Also, a small Twi-Shy in "Hurricane Fluttershy" is my another favorite as well. <3 <3 <3
