This one wasn't made by me but by my sous chef but I thought I'd share it anyway. Pineapple mousse cakes, the left one uncoated and sprayed with cocoa butter, and the right one coated with agar agar.Related content

It's a gelatinous ingredient made from seaweed. It's used extensively in asia especially in jellies. Somewhat similar to Gelatin.
