gotta get her an ID, she is shown graying out already in this image, if you will notice her foal image is a much darker fuller color, when i update her again she will be fully grayed, as i have no sense of time

its actually pretty simple, all you really need to do to get started is either create yourself a horse, or get one of an established breed, which there are many on deviantart
a lot of the breeds have breed specific rules that you have to follow, but a lot of them dont.
the stat system is something that varies breed to breed and there are ways to have a horse that dont require all this crazy point system
