I already got confuse, cause his eyes were red when he was fighting Toshiro, in video games they were yellow, now in Arrancar Encyclopedia they are blue. I just gave up but I think red seems like a better color

Well in canon, his eyes are blue.
Just Kubo forgot to tell this to anybody, and since the animation team didnt knew this back then, they had to come out with a random idea for his eye color. And since {my assumtion} Toshiro already had white hair with blue eyes, they didnt want to make Gin a copy of him. In the video games his eye color is as random as his bankai, if you get what Im saying.
In the past I also prefered the red one{it made him more special} but the blue isnt that bad. And yellow is already being used by the Vizards, so that was out of the picture.
