I turned the physics timescale to 0, statued her, returned the timescale back, placed her down gently so her hoovs didn't clip through the floor, and then face/eye posed her.

The mane isn't a huge worry for me, it's the fact that she goes crazy if you pose her wrong.

does she spazz out? they all do that when you spawn them. but i havent had her go crazy after i pose her

She doesn't spaz on spawning, it's when you try to put her in a difficult position that she goes wonky.
And to stop the spazzing and get a great neutral starting pose, turn the physics timescale to 0, statue the pony, return the timescale back, and move the pony out of the ground.
