Because Pikachu, Clefairy and Eevee have been the other starters at one point or another in Kanto .w.!!

Pikachu and Eevee in Pokemon Yellow and the Let's Go games, and Clefairy in the fabled Pokemon Pink!!

Pikachu is now more of a mouse, it's face is somewhat based on a plug with small metal parts on its ears and an electrical wire as a tail~!! Clefairy became a nod to Aliens, because of their extraterrestrial origins, it wears and UFO "dress" and combines both Grey alien features as well as those of a Moon Rabbit!!
Eevee was the most fun, it is now more of a solid canine, a komodor to be precise, already hinting towards their unlimited potential~!! What kind of evolution could be hidden underneath that big fluffy coat??

I said it wouldn't become a big project, whelp here we are .w.;;
