It's funny the way you get an image in your head when you're reading something. This isn't quite how I pictured Simone, but I don't think it was the way you described her that threw me off. I think it was her attitude. She reminded me of a real person I know of, so that was the image that formed for me.
That said, this isn't incredibly far off. And damn... she's a big girl. Size isn't everything in a fight, but I suspect that taking a big shot from her would make me rethink my life choices, a little bit.

Hahaha, I'm super curious how this differs from the image in your head.
Yeah, she's supposed to be 5"8 or so and fights between 130 and 145lbs. She's not a small girl

I had her down as sort of a combination of two people, actually. Both are (or were, as I believe both are retired) real boxers. One is Anne Wolf, whose crazy knockout of the much taller Vonda Ward is still featured in highlight reels today. The other is Fredia Gibbs. More specifically, I'm thinking of a character she played in a movie title Knockout.
Both Anne's actual behavior and Fredia's cinematic behavior were too over the top to actually be Simone. But both flashed a lot of attitude, so they were what popped to mind. As far as size goes, both of them are powerfully built but not very tall. Though, I guess at 5' 8", Simone is probably right around their height. But she looks taller in the image.
