Since the giant spider is Mimi's "true form," that means that her normal form is her disguising herself. Now, when she transforms, her "arms" extend into one pair of legs, and her "eyes" extend into another, while her "torso" and "legs" just hang limply below her. Her mouth, meanwhile, remains where it is, and continues to move when she talks. (In Chapter 2, the outline of her bowtie appears to unfold into a third pair of legs, but in Chapter 8, they just seem to appear, although the black background makes it hard to tell.) If we assume that each body part on her normal form corresponds to the part of her true form it turns into, this suggests that Mimi's "head" is her actual body, and her "legs" are actually her pedipalps. This in turn suggests that under her dress, her "arms" and "legs" would connect directly to her "head," without any torso to speak of. (And yes, I know her beach outfit appears to show her chest, but that could easily be part of the dress.)
