Because "Dr. Eggman" was what Robotnik was always called in Japan. (Wich explains why alot of inventions are named "Egg-something," or "Something-Egg") Kind of like how Bowser is called "Koopa" there.
I kinda wish they left him as "Dr. Robotnik" sometimes though, or use both names like they did in Sonic Adventure.
