Description A last baking hurrah before I leave home and our crazy, temperamental oven. In fact, this year I'm living with a bunch of my friends in a house WITH an oven (unlike my previous two years) so maybe I'll find time to whip up some yummy baked things...
This was my first ever attempt at puff pastry and I am chuffed that they actually puffed!

And maaaaaan, they were delicious...


I made ten twists from these quantities, took me about 1.5 hours in total (including fridge time):

Puff pastry:Β 110g cold butter,Β 140g plain flour, some water (I used only a couple of dashes)
+ Cut the butter into cubes, pour the flour over and rub with fingertips until get rough breadcrumbs. Add a little water until it comes together in a dry dough
+ Roll out onto a floured surface into a rectangle and fold into thirds, repeat about 5 times (I avoid rolling across the pastry, only along the long side)
+ Stick in the fridge for > 30 mins

Cinnamon sugar filling: 60g white sugar, 3 teaspoons ground cinnamon
+ Mix together cinnamon and sugar
+ Take pastry out of the fridge and roll out into a rectangle on a cool, floured surface until about 0.5cm thick
+ Melt 25-30g butter, spread over the pastry (I don't have a brush so I just pour and use my fingers) then sprinkle most of the cinnamon sugar over and rub in

+ Fold pastry in half lengthways, cut into strips (~inch wide)
+ Twist the pastry strips and stick to greased baking tray, spinkly cinnamon sugar over the twists
+ Bake for 15 mins on 180oC until golden and crispy

You know, these are going to be my lifetime meme

I love to bake fresh and healthy food for me and my kids and as soon as they saw your twists they were shaking like crazy screaming they wanted them


Allergic/Intolerant mode on

I will replace sugar with fruit composts and butter with plain quark (in other recipes I'm used to have fruit quarks just to add extra popping flavour) and white flour with almond flour.

Allergic/Intolerant mode off
