I see you are basically working from front to back, does that mean you are using a lot of layers or is it all one anyway?

yes, on this illustration i worked from this way, but do not use a lot of layers. One or three layers for the general and big objects (mountains), one layer for background elements and others two or three layers for details ( bridge, birds, reflections, brightness...)

Can I ask what it depends on if you work from back to front or the other way around? Or is it just a mood?

depends the illustration composition, and light.
In this case, it's more easy draw first the most illuminated elements, after, project the shadows in base of this illumination.
