I've been doing nothing but "improve" because it's been about a year since I last played Minecraft
Plus, finals are in a week and I still have alot of school work to finish (and to top it all off, I got kicked out of my graphic design room during my studies, so now instead of being there 3 hours a day I only have 45 minutes XP)

Golden Carrots are edible, however they fill the same amount as regular carrots, so unless your inventory is overflowing with gold I'd save them for potions.
