In my opinion, if the wind-up key was applied to Amy Rose, she'd become a mindless robot, endlessly repeating the name of her darling Sonikku and chasing after him.  She'd probably pull out and use her hammer at the slightest provocation.  So in other words, not much will change.

(I'm just joking, of course. I am a fan of Amy, but can poke fun at her from time to time.)

Though if you mean "pulled off" as literally meaning the key mechanism getting removed, that is a good question.  Either Amy would return to her usual mental state, or she'd shut down completely and die or something equivalent.

Hmm, hard to say... I'd think she'd merely have her robot functions stop since it's a power source...
After all, she wouldn't die since maybe putting it back in would mean fixing her issues.

Perhaps.  But much the same way that yanking a power cord out of a machine could potentially cause a short-circuit in the electronics, perhaps there'd be damage.  It's all conjecture, of course.
