Haha! From what I understand thus far it's a "white glove treatment" meaning that the help would serve the mail on trays to show upper class and to keep from touching the master while bringing in morning mail/keeping the master clean/not having to touch the help so to speak. Evening mail is handed directly to the master/no tray. I guess a day of being out and about or doing daily duties makes one dirty? So complicated.

well....it's pretty, and it's more respectful.....there's no direct hand to hand contact. (although with ciel and sebby, they kind of stretch the master/butler relationship a bit )

people in japan do the same thing with money. when you purchase something at a store, you put your money in a little tray that they have on the counter. then the cashier takes the tray and the money, and then gives you back the tray with the change and/or receipt.

with that in mind, as well as the butler etiquette in the victorian era, i can see why sebastian does that in the anime/manga.
