Very cool scales!
One piece of advice. If possible I would add ray traced reflections (or what ever they call object/model reflections in the program your using) to the eggs' surfaces. The missing reflection of the scales is the only thing giving this image away as CGI. Otherwise it looks real.

I'd enjoy it more if I could figure out how to make the parts separate in a model and keep the edges I want hard when dividing the model.

when you subdivide, uncheck the SMT button under geometry for just a tessellate. when you want to add a new part, append it to the sub object. if you need to import something first, select a random sub object first, say a zsphere, then import, otherwise it will try to update what you currently have selected.
