I feel like you people are giving the Federation too much credit here, just like most Warsies give themselves way too much credit. I don't think the Federation could defeat the Empire. Turbolasers and blasters aren't true lasers and have much more power behind them than the average phaser. Imperial deflector shields come in both particle and energy varieties, whereas Federation tech combines the two, but Imperial shields are generally stronger due to their militaristic needs.
Now, the Borg, on the other hand, can defeat the Empire if they have enough ships to devote to a full-scale invasion. Prioritize the Death Star, assimilate it, turn it into a mobile Unicomplex, reroute the energy output from the superlaser to a full-scale regenerative shield matrix that covers the entire station, thus eliminating Galen Erso's sabotage gambit, and the Empire has a big problem on its hands.

I meant this as a joke, given that my ship is a tiny light cruiser. The Polaris could never defeat the Death Star. The Federation, I thinmk they are able to defeat the Empire, but it would by a pyrrhic victory.

Star Trek ships from TOS and on can easily destroy the Death Stars and anything else from Star Wars. Its PHASERS vs. Turbolasers, PHOTON TORPEDOES/QUANTUM TORPEDOES vs. missiles, ACTUAL DEFLECTOR SHIELDS vs NONE or early electronic shielding and WARP DRIVES etal vs. Hyperlight. Β I can imagine Tarkin having his crew scan the Polaris, and say that it is all a bluff. He'd probably say that the Polaris harfly even worthy of the classification of Battlecruiser either. I just don't see it ending well for the Polaris. Star Wars vessels have enormous reactors for their enormous sizes.
Β Now, after the events of the Borg Incursion of 2381, and the fleet-wide handout of Transphasic Torpedoes, it would be a whole other story. The Polaris from that period (or even a Corvette) could probably destroy the superlaser of the Death Star single-handely with one torpedo!

Tarkin can make one huge mistake here: call the Polaris a frigate. Metlesits would go Hulk on him. Nobody calls the Polaris a frigate

The Polaris would take it out, no problem.
They'll beam a kilo (okay, make it two) of anti-matter into the guts of that big ol' particle beam blaster, and then beam out the containment vessel, leaving the exposed anti-matter, and wait for the big ka-BOOM!
