Okay, when you first made the Avante Polaris vs a sphere, I was confused. If this Polaris is before the "D" and Stargazer, how come the Feds didn't officially know about the Borg until the 2360's?

Nahh, the Avante was before the D, but way after the Stargazer era. The ship was built for the Tzenkethi War and was tossed through time a few times, from the 2350's to the Battle of Wolf 359 and, finally, to 2380.

On the note of the one ship, I always thought that the Enterprise was the 40th ship in the fleet and the one that survived. Anyway I love the fact that the Polaris was in the fleet, makes sense, they are Earth's last line of defence are they not?

No, the Saratoga was destroyed. The only reason Sisko survived the battle is because he and other Saratoga crewmen abandoned ship.
