They're all made of minky, the galaxy plushies are custom printed minky (that I designed). They're all beanies, filled with plastic pellets and polyfil. The patterns are made by me (all of which are either in my shop or will be soon! soapybacon.etsy.com). More details can be found on the listings themselves. ^_^

I hope you're still enjoying your job. I know working a FT job makes it hard to find the time you need to do the artistic things you want to do, but like I tell my son, always find time to draw/make something even if its just one drawing or in your case a plushie a week.
