That's because I don't think it's supposed to be peach at all? It's their own made up character, so peach's name shouldn't have anything to do with it
As for ette it's to make it a feminine version of the name boo, toadette has ette because it makes it a feminine version of the name toad, same goes for characters like Smurfette, female Smurf or the chipettes the female version of the Chipmunks

I know what it means and what it's typically used for but I appreciate the answer! And it answers my question if that's why people are doing it this way. Because I was under the impression that Peachette was named such as a "clever" fusion of the two characters names since it's one character using an item to look more like another character. So I figured, with the fanart happening latching on to this character fusion/disguise idea, that they would mix the name Peach with whichever character they're doing too.

The characters are supposed to resemble Peach but still maintain the features of the original character, that's where Peachette came from. It's basically Toadette that picked up the Super Crown and transformed into Peachette but still had the features Toadette had (Which is an actual character created by Nintendo)
As for the -ette at the end, the fans add it to the characters since the first one (Toadette) had it and it was a way to know if it was a female version or not, hence why every gender-bent of these characters have -ette at the end.

Back to the ette xD isn't that pretty much what I said? o.o "it's a female version" But however, it's nothing new, people have been adding ette at the end of names to make it a female version even before Toadette ever existed
