I imagine there's a lot of history between Equestria and the griffon kingdoms. Hopefully we'll see more of that in season 5.
In the meantime, unless griffons are only fish-eaters, I can imagine a lot of them looking at ponies as "mere herbivores" and "lucky they're not dinner". In many people's headcanons the griffons are more clannish, much more rough-and-tumble, more willing to settle arguments with a fight, and in extreme cases resort to banditry. History would have taught them that unicorns are dangerous, pegasi are formidable in the air (and can drop an F5 tornado on your house if you piss them off), but earth ponies... easy pickings.

Looking back at this with the new info we got from the Treasure of Griffostone episode, it makes sense she became a pick pocket.

It's all good, though. One plucked feather later, a few good whacks across the backside with the flat of the blade, and perhaps a lesson or two are learned as a sniffling griffon is sent upon her way.
Not all ponies are soft, and preying upon those you consider weak can turn around upon you in a heartbeat.

Being a roadside banditΒ is probably easy for a Griffon, given that most Ponies seem to be rather cowardly and can be scared in giving up their goods, so that she does not even have to resort to violence most of the time. Even then, Griffons are stronger.
Unfortunately, as you said,Β she not only encountered someone who is not only not scared, but also knows how to defend himself against her.

Ahh, but she started it!
A pencil clip is the inspiration. The split band is essentially a spring steel clamp around the hard portion of the hoof. The split lets the band open as the hoof is inserted into it, then it clamps down around the sides of the hoof.

She's unarmed! A proper gentleman does NOT assault someone unarmed, especially a lady! You know better than that!
Ah, I see it now. Clever actually. I do worry it would come loose on more energetic swings tho...

Besides. There are proper gentlemen, improper gentlemen, proper ruffians and improper ruffians. Calvados is the second, the griffin is the fourth. It's... kinda like an ecosystem of sorts. They need each other.
With a rapier, you don't do a lot of swinging. The blade should always be in line with your opponent. Parries are done with the portion of the blade just beyond the hoof, er, hand, which applies the least amount of disarming-leverage to the clip, er, grip. In any event, ponies are made of magnets. Or gecko-feet. Or velcronon-trademarked hook-and-loop fasteners. Things stick to 'em.
