Wow Nice Job on the Bento Box! When I have the money and my own house I will be practicing my Culinary experiments and techniques. I do have a big interest in Japanese Culture as well. I just can't figure out how to make those Daifuku Mochi-thingys .. I've tried 6 times now.. The problem is, I don't know how they are supposed to be like. I think mine are too soft..

Wow I have alot of respect for you trying to make them! I cheat: I buy them from a tiny Japanese store in my area. Diafuku are supposed to be soft, kinda like bread dough before it's cooked but still slightly firm because of the sweet bean inside. Do you fill yours with a sweet center? How do you make the sweet mochi outside?

Aww.. Cheat.. They don't have them in our asian store..
I actually have a recipe here [link] It's in Danish, but you can still see the pictures.
And the ingredients say: 1.4 dl water - 1.5 dl mochiko (the rice flour) - 0.5 dl sugar - foodcolor - Vanilla - Koshi-an (sweet red bean paste) or other fillings - and some corn-flour-thingy (forgot what it's called x'D).. And the thing that happens from picture 2 to 3 is that I cook it in the microwave for 2x2 min at 4 - 500W (medium heat).
And these I made with peanutbutter and peach :3

Oooops... I remembered wrong ^^' It is 'otato starch' (actually it doesn't matter, as long as you have something that prevent the Mochi from sticking to everything) I have used 'Maizena Corn Starch' for mine.

Yep I pressed the rice into moulds to make cute shapes and then sprinkled the sesame seeds on top.

Yep. You could add me to your watch list if you'd like. I will be making many more bento in the future. This is a new hobby for me, I am so excited to express myself artisticly with food as well. I really enjoy and respect japanese culture and it's tasty too! ^_^
