I really like this one, and have some concept ideas that I thought of while drawing them :3

A barista who always stands behind the bar, so you rarely see that their tail seems to connect to their... lively shadow
They tend to keep a very neutral expression at all time, and use polite language like 'sir' and 'madam'
Probably the keeper of some very important secrets, perhaps the keeper of an eternal bar
Of course this is all up to whoever adopts and owns them ^v^
