They aren't completely fireproof, we've seen dragons get scorched a couple of times. But in each case it was magical, not natural, flame.

That never helped any other dragon faced with a pointy stick, from St George's dragon to Smaug. It's like saying that humans drink water, therefore are impervious to our mightiest snowballs. Lava? Sure, why not? Fire? Unless proven, there's no reason why it wouldn't burn them a little.

Your analogy is horribly tortured. To match the logic of "dragon scales are impervious to lava, therefore dragons are fireproof", a more accurate analogy would be "human skin doesn't dissolve in the ocean, therefore humans won't melt in snow".
