I thought the Tau had sort of a deep-blue color to their blood?
Since their blood has cobalt in it instead of iron...

They have grey-blue skin, but that doesn't mean they have blue blood.

I don't think there's any canon that ever mentions the color, but here's a theory so well written it makes up for that fact: [link]

Looking at the Ciaphas Cain Omnibus, on page 99, it has a footnote that says the following: "The tau equivalent to haemoglobin contains cobalt, rather than iron, so their blood and viscera vary from dark blue to purple, depending on the degree of oxygenation. Don't even get me started on the smell."
So I guess it is, in fact, canonical.
