dont see much greyscale work, but this has got to be one of the most well done works greyscale or color ive ever seen

It's actually printed in grayscale, not color.

oh...well sometimes i see artist post greyscale images and then a colored version. do they use saturation to add color?

well I would do it with a hue balance then a color balance then maybe a curves then a saturation.
