I always wondered what these would look like as the actual bulk freighter...

In the expanded universe they were bulk cruisers by default.

A "Bulk Cruiser" was a ship that combined the characteristics of both a cargo hauler and a warship. In essence a cargo vessel that can defend itself.

The Quasar Fire was a bulk cruiser built by SoroSuub Corporation, the internal bay was a cargo utility to which large freight containers could be inserted or removed. Some local governments converted the cargo bays to carry starfighters and some found their way into the Rebel Alliance. The ship first appeared in the EU novel "The Truce of Bakura" in 1994, it's first image was drawn in the Essential guide to Vehicles in 1996 and it's first in game appearance was in the PC game Star Wars: Rebellion.

My guess would be the entire open middle part would be filled in by two cargo pods under-slung on either side, maybe each tapered inward to form a triangle shape.

Good idea to show the underside. With this design, all the "action" happens to be on the bottom of the ship. Thanks for the render.

Micro Machines released I think the one and only model of the ship. I'm hoping she'll appear someday for Fantasy Flight's X-Wing miniature game.

Iยดve seen some of those models in a gameshop in my region.
Those models looks great.
Sadly, they are quite expansive. At least here in Austria.
