I like it. I feel like reaching 3 counters without interference from other cards might be a bit much. If you only made it remove two counters it would make the +2/+2 option feel less like a waste, and being able to use the ability in combat every third turn still seems reasonable to me.

Do mind they're not just counters, they're +/+ counters. so she get's increasingly tough to remove not to mention she can give herself hexproof (which i may remove actually)

2 counters would mean you could just double strike them back every time. I think that's a bit strong. Understandable about it though.
Maybe i'll make double strike natural on her.
