That's because a ponytail is practical. It keeps the hair out of your face while working. If you think about it, every Ponyville Apple has a ponytail of some sort. AJ has a traditional one, Bloom has a different one because of her bow, and Granny in a bun because old generation style.

Why hope your wrong? Another fanfiction out there that puts Bic Mac and Fluttershy together ended up with 20+ children... Fluttershy really enjoyed nurturing children... That and those children along with Applejack's and Applebloom's children created a community in the Apple Farm. Production has never been higher!
