So this is the result of a lil' headcanon I came up with

I already had it that vee learns to fight with a katana... but how does he learn?

I highly doubt that shawn would be teaching him. Shawn hates vee fighting, or getting hurt,
and vee isn't the strongest person to begin with, being quite weak and delicate.

so any mention of sword practice would be shut down very quickly

But vee still wants to learn to fight, to protect himself, and not feel like such a burden

Thus, he ends up going to visit keiran in secret, to practice

why? despite how much keiran makes him uncomfortable,
and even a little scared, he knows keiran will earnestly fight him.

also, keiran is able to tick him off enough to fight back.
vee feels like he really needs to defend himself, instead of holding back, like he would with shawn, for fear of hurting him

and so, vee and keiran fighting was born

Looks like vee might even be winning
