What exactly are you referring to? The colours, focus, lighting?
First of all and obviously you need a good camera, not necessarily a D-SLR, I have a compact point and shoot camera myself, but something that has between 6 and 10 megapixels, good quality lens and advanced firmware technology, and for shots like this one a macro mode is needed. Mine is a Canon Powershot A630.
Then I postprocess my shots in Photoshop, where I set contrast, brightness, saturation, sharpness and so on...
