my problem is even though she has the hyuga bloodline eyes her eyes are blue with a pupil so wouldn't the pupil just go away leaving it blue?

I personally think her byakugan is more of a blue-ish color. Byakugan users (except her) have a naturally while-purple-ish eyes and their eye color doesn't change when they activate the byakugan.
But then again it's called "White eyes" and the sharingan also turn the eye red so who knows.
