I actually had no clue how to do plushies myself, I just jumped right in! The easiest way to start is to find an easy pattern and just start simple. You can always add details later, but start as easy as you can.

My first plushie was a terrible version of my OC lol but it's important to make mistakes to figure out what works best for you. I jumped from pattern to pattern to figure out what worked best for me, and even now I just kind of use a combination of the pattern and my best judgement.

I suggest you use felt since it's super cheap and easy to work with
