I use a Moleskine sketchbook, not a watercolor one. It's a little bit complicated to control water there, because the paper is for pencil work, but it works. They also have notebooks specially for watercolors (never tried one though).

but do you use pencils or paint on it? and also how do you wet it? ( if you do )

I use a pencil for the lines and watercolors for the coloring. I don't wet the paper before I start to color.
