Robot masters (of which Zero falls under due to him being made before Reploids existed) used hydraulics, servos, motors. They did not contain true "blood". As for why you would see red from robots he's cut down or red from himself, because they are robots and quite a few variations of hydraulic fluid (especially those that are heat-/flame-resistant) are made to be red-colored. This makes it easier to pinpoint where such hydraulic leaks are coming from for repair reasons.

From what I have deduced from Japanese games, reploids have a fluid that is sort of like blood and is even the same color flowing in the cables inside of them. This is what is being splattered here. He did not kill a human.

Heh, still great pic though. The colors are great, and the helmet-breaking looks dynamic.
Still, I can't help but get the strange feeling that Zero looks like a girl with the combination of the eye and bang on the left side. But that is in no way a detraction from the piece. Just an observation.
