Description 2 reasons why I've tried finding pairs of types at all:
-PTCGs poorly thought through "colors" (poison, psy and ghost get thrown into the same color, coz purple, while things like dragon, dark and fairy get their completely own color?...)
-whenever I see fans saying "ground and rock should be one type, because they're the same and have mostly the same weaknesses anyway" (I disagree and will argue any day that they're completely distinct concepts. Sure they do share some thematically, but the same can be said for a plethora of types when you start grouping them like that)

I haven't come up with enough examples yet of how this pairing could manifest in the game mechanics (it could be used to shake up the TCG a lot though obviously), but one example I do have is:
STAB is no longer a AttackBonus for moves of the SameType, but for moves of the same type pair.

In other words, what it would mean is that a Rock type PKMN would get a boost to Ground moves in addition to Rock, and a Ground PKMN would get a boost to Rock in addition to Ground.

Another one that just ocurred to me is:
Gyms could be focusing on pairs instead of single types, making them more diverse (more options to cover their weaknesses) while keeping them thematic.

Shadow is a type in Pokemon Colluseum on Game Cube.

Isn't Grass+Fairy= Fea?

How is Bug+Poison equal Hazard? Reference to Flies?

Psychic+Fighting is Brain and Brawn! ^^

Earth is ground, so…

Bugs are often considered pests, simply by being small and numerous as well as often having parasitic tendencies  and stuff like that I suppose. It seems like the best match with Poison IMO.
The other one I could see an argument to be paired with Poison would be Dark I guess.... in that case, I would want to pair off Ghosts with Psychic to represent everything spiritual....then Bug would probably end up beign thrown together with Bug for being a "green" type and often living in forests as their generic habitat.

I usually see Ground the type as a strategic standpoint akin to Flying, rather than an earth element, so the two are distinct enough to me for one to be used as a subset of the other.

You know what's funny?

All of these type duos already have at least one Pokémon that is their type combination.

Yeah, but "at least one" isn't enough IMO

Often when people are discussing what new type combos they want to see, I usually chime in saying that there is tons of already existing combos that feel very "natural" but are underused.
Like, Electric+Steel (just Magnemite and Togedemaru) or Ghost+Dark (just Sableye and Spiritomb, are both combos that I would expect to be as common as Bug/Poison or Water/Ice and Rock/Ground.

And in case of Fire+Dragon, it also feels like the most obvious and cliche combination that you would think we would have some generic dragon PKMN having that type, but instead, we only got a legendary Dragon/Fire at gen5, then a pseudo-retcone of Charizard into a Dragon, albeit only as a mega evolution, and now finally with Turtonator as a more "normal" representative of the combo

One extra interesting mention: I never thought that Bug/Steel would become one of the most common combinations xD

Or group them by element:
Fire         (Fire / Dragon)
Water     (Water / Ice)
Earth      (Rock / Ground)
Air          (Flying / Ghost)
Wood      (Grass / Bug)
Metal      (Steel / Electric)
Dark       (Dark / Poison)
Light      (Fairy / Psychic)
Neutral   (Normal / Fighting)

I've considered grouping Grass and Bug (not to mention both are the same color in the TCG already anyway), but Bug&Poison overrules it for me (just feels even more matching, despite their colors not being even close).

But the part that I couldn't let pass in those groupings is how there is a "Dark"-duo that are supposed to be literally about darkness (which the Dark type itself isn't even primarily about. It's more about being mean, sneaky, unfair moves etc.), but the type that is the most "darkness"-related is not in it: Ghost.

Some other individual duos I've considered were:
-Ghost&Psychic = Spiritual
-Fire&Electric = Energy
-Fighting&Dark = Brawl
-Ice&Flying = Cold
...

Gyms with TWO typing's?

Maybe you should pitch that to Game Freak. :T

Look at the elite four:
-Lorelei (Ice / Water / Psychic)
-Bruno (Fighting / Rock / Ground)
-Agatha (Ghost / Poison)
-Lance (Dragon / Flying / Water)
-Koga (Poison / Bug)
