Some of the in-universe explanations for vessels without dishes are that the full-sized ones are super-deflectors and/or sensors, especially useful when further away from charted space. Vessels without dishes are presumed to have features built into the hull that provide similar protection, but without the same range or strength.
Adrasil has noted some of these within his blueprints. For example, check out his Miranda class, for the WADE (Wide Area Deflector Emitter, I believe). If I recall correctly, even the Connie refit has one of these, as auxiliary. For an older vessel like this one, that equipment would be less pronounced. (My head-canon has it built into the saucer rim.)

Hey, I didn't design it. But, like what I did for some of the TMP designs, I'll probably do a version with one. I usually start off with the screen version, then later on do a variation.
