As someone who's attempted surgery on a few melons over the years, I would say Winslow was attempting to take off the boy's ear, possibly to encourage him artistically, a la Van Gogh. Since Winslow seems to have used his teeth instead of the correct instruments (chef's knife and/or melonballer), he also took out an eye and some of a frontal lobe.
Naturally, a Wolsniw would have put in kumquat ear extensions, using properly sterilized toothpicks.
