How do you get such deep relief without cracking or going through the horn?! I want to try carving horn, but I'm terrified.

you just have to know the material and your tools and by doing it over and over again. Try taking a horn and purposely cutting it in half lengthwise then drilling holes in it to learn how the horn grows and how deep you can go before going through ,basically destroy the horn. To learn the material is your goal, then get a good horn and go at it with better confidence!
